Butterscotch Haystacks

Ingredients 1 package butterscotch chips (approx 12 ounce) 1 can (10 ounce) cashews 1 can (5 ounce) chow mein noodles Directions Melt butterscotch according to package directions. Stir in nuts and noodles. Spoon onto waxed paper and let dry.

Green Beans With Tomatoes 

1 pound green beans stems removed then break in half

1/4 cup oil 

6 peices of garlic chopped 

1 onion sliced

1 can stewed chopped tomatoes 

1 teaspoon cumin

Salt and pepper to taste

Pot of boiling water add green beans and cook 5 minutes then remove from water run under cold water set aside.

Place oil in wok heat to hot add onions and garlic sauté add cumin and salt and pepper add tomatoes and green beans cook for 15 minutes then serve hot or cold  

 

Stir Fried Vegetables With Peanut Sauce 

1/4 cup oil 1 onion sliced

1/2 inch piece of ginger sliced

1 inch fresh Turmeric sliced

5 pieces garlic peeled and sliced 

1 cup mushrooms sliced  

1/2 pound firm tofu cubed

1 head broccoli broken into small pieces  

1 bell pepper sliced 

1 yellow zucchini sliced
3/4 cup peanut butter 

4 tablespoons soy sauce

2 teaspoons nutritional yeast 

1/2 cup water 

Prep vegetables slice and set aside 

In wok heat oil and add garlic , ginger and Turmeric root sauté for 2 minutes add mushrooms , onions , broccoli, bell pepper and zucchini sauté until vegetables are tender
In sauce pan combined peanut butter ,soy sauce and nutritional yeast add water and stir till smooth and warm then add to vegetables and serve hot  

  

Chicken vegetable Tagine

2 chicken legs and thighs skin removed 2 tablespoons olive oil 

1 teaspoon heaping of ginger

2 teaspoons turmeric 

1/4 teaspoon salt

1/4 teaspoon black pepper 

Water as needed

1 onion sliced 

1 kohlrabi peeled and cut into 4 chunks

1 zucchini ends removed and sliced into 4 chunks
To make get tagine pan add oil then onion chicken*

Then take spices mix in small bowl then add to chicken and add water bring to low simmer cook 15 minutes till chicken is soft then add vegetables and cook until tender over low heat watch water so it doesn’t burn add more if needed 

I simmer till very little liquid is left 

Always wash chicken either with lemon juice or vinegar let sit 10 minutes then rinse to remove chicken smell  
 

Got a juicer

As Salam alikum readers 

I got a juicer yesterday and started using it below is a juicing recipe I really like

2 stalks celery

1 piece of ginger about half inch long

1 zucchini 

3 handfuls of spinach and kale mix I used the baby kind

6 medium apples 

Wash everything then slice apples and zucchini 

Run through juicer add small amounts spinach and kale then apples , ginger , celery use the pusher to safely get everything juiced, once finished stir and then pour over ice and enjoy makes about 4 big glasses full.

Side note I place a bag over the end that catches the discarded pulp and skins from juicing easy clean up.
