If I had a wish, it would be this
that all Allah’s people would be just like him,
able to cope, trust and just get along.

has to offer. Instead of trying to hate on your
sister or brother. Yes, life would be so sweet,
if we just stop trying to compete, for what’s already been
promised. Life everlasting and peace of mind.

Scrambled eggs with fresh chives and salmon, one of my favourite all time sunday breakfasts

i have used soya margarine in this recipe becasue in islamic medicine the combination of fish and diary is considered toxic…interestingly when i was living in roma , the romans frowned on me when i put paremesan cheese on fishy pasta dishes…now i know not to do it!

ingredients per person

2 eggs per person
1 teaspoon of soya butter
125ml of soya milk
1 dessert spoon ofchopped fresh chives or 1 teaspoon of dry chives
1/2 teaspoon salt
1 teaspoon black pepper

1 large slice of spoke salmon or equivalent


1.Lightly whisk the eggs, salt, pepper, chives and milk together until all the ingredients are just combined and the mixture has one consistency.
2.Heat a small non-stick frying pan for a minute or so, then add the margarine and let it melt. Don’t allow the butter to brown or it will discolour the eggs. Pour in the egg mixture and let it sit, without stirring, for 20 seconds. Stir with a wooden spoon, lifting and folding it over from the bottom of the pan. Let it sit for another 10 seconds then stir and fold again.
3.Repeat until the eggs are softly set and slightly runny in places, then remove from the heat and leave for a few seconds to finish cooking. Give a final stir and serve the velvety scramble without delay.
4. serve with fresh smoked salmon

Getting the best results

Always use a non-stick pan with a wooden spoon/spatula for best results and easy cleaning. do not over cook,the eggs should have the texture of soft curds. It’s best not to cook more than three portions in one go as you will overcrowd the pan and the eggs won’t cook as well. For larger numbers, cook in two pans rather than one.

you can add cooked mushrooms, fry them first or even dates, yes chopped dates, inshallah i’ll upload that another day, an egytian family taught me a long time ago before i converted to islam….so enticing
